Super Aasan Thai Green Curry
In just 20 minutes, you can enjoy authentic Super Aasan Thai Green Curry right at home with these super easy to find ingredients. You may also add fresh or dried basil and lemongrass to the curry. Enjoy!
Ingredients
- 1 Small Onion
- 4 Small Chicken Breasts, or Equivalent Quantity of Beef, Fish, Prawns, or a Combination!
- Vegetables such as Mushrooms, Carrots, Sweet Peas, Sweetcorn
- ( Green curry Sauce )
- 1 Tin of Coconut Milk
- 6 Tbsp Fresh Coriander Leaves
- 1/2 Tsp Coriander Powder
- 1/4 Tsp Cumin Powder
- 1/4 Tsp Ginger
- Dash of Soy Sauce
- 2 Cloves Garlic, Crushed
- 2 Small Green Chillies, Seeded and Chopped
- Juice and Zest of 1 Lime
Method
Step 1
Heat oil in a wide pan and on a medium heat, cook the onions and then cook meat till it's no longer pink. Then cook the veg for 2-3 minutes.
Step 2
Make curry sauce: Place all of the ingredients for the sauce into a blender and blend.
Step 3
Pour in the curry paste and simmer for 20 mins, or until all ingredients are cooked and have absorbed the flavor of the sauce.
Step 4
Serve with basmati rice.
